"Potato Talk!" 

Potatoes are Oregon’s 7th biggest cash crop, grown primarily for frozen French fries and chips in the Columbia Basin, and in the Klamath Basin for fresh sales. Tubers also kept our grandparents and parents alive during the Great Depression. Maybe you’re cooking with them more now, to stretch those food dollars during these tight times. Though maligned by the low-carb craze, potatoes are a vitamin-and-fiber-rich nutritional punch.

On today’s show we’ll hear from:
•    Eco-chef and activist Bryant Terry who will tempt us with a recipe for “Cumin-Cayenne Mashed Potatoes with Carmelized Onions,” from his just released cookbook, Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisine.
